1, Fried equipment operation: when the temperature reach setting temperature can start frying. At this time add a small amount for frying first, then gradually increase the amount, so that not affect the quality of food color. 2, Put oil program: If frying equipment need oil change or clean up do not discharge the sanitary sewage water, should first open the oil valve, complete dischage oil from the oil drain valve, then open the drain valve for water.
3, Residues discharging procedure: After a working days, Fried oil should be cooled to 80 degrees, and then can carry on drainage work, to open dirty mouth, at this time, all the food residue and water out, close the drain valve when have oil flow out.
4, Add water program: After drainage work, can immediately add water until the water level, also can add water before second time work, that would be best, because some food residue easily float if after a long time soaking.
5, When the equipment has much slag during frying process, should pay attention to the cleaning of heating pipes, because the slag on heating pipe, long time will form a carbon residue, which will affect the color of the oil, therefore it should increase drainage work during the process of frying food.
6, Every time after the completion of the work should start discharge and clean work, especially keep the residue channels unblocked.
